Aunty Ett's Lemon Curd / Recipe

LEMON CURD
A recipe from the Gordon Family

As we enter into Summer, we wanted to share a very special recipe from the Gordon family to you. This is our Aunty Liza's lemon curd, which she has perfected over the course of many years. The lemon curd is an essential ingredient in the famous Great Aunty Ett's pie. 

 

 

 

 

 

 

 

 

 

INGREDIENTS

1 Serving of Lemon Curd

  •  3 large lemons
  • 180gsm butter diced
  • 500g castor sugar
  • 4 eggs lightly beaten

METHOD

Wash and peel the lemon thinly, then squeeze thee lemons, placing the peel and juice in a double boiler along with the butter and sugar. Heat until the mixture is warm and butter has melted. Take off the heat and if too hot allow to cool, then add the eggs, whisking until the mixture is all incorporated together. Strain and return to the double boiler and on a medium heat, stir with a whisk continuously until thick and coats the back of the spoon. Do not allow the mixture to boil as the eggs will over cook and curdle. Strain into a jar or bowl.

This curd can be made up to 2 months in advance, and if you are not going to use that day, place in a sterilised jar and refrigerate until needed.
